Kilchoman is a relatively
new, small-scale distillery built in 2005, whose aim is to create 100% Islay
whisky from the field to the bottle. The process starts close to the distillery
where the barley is grown on their farm. It then moves to their malting house, on
to the distillery itself, finishing in their own bottling house. It is then
distributed around the world.
I have created a diagram to show the process to create a bottle of Kilchoman Whisky.
This process only works on a relatively small scale, but it does create a unique and desirable product. However, this process still uses a great deal of energy which could be created on the island with the right investments.
